Chia Seed Pudding

I found a yummy recipe on Pinterest! I’ve been curious about chia seeds for a while, and this yummy easy recipe was a great place to start. Thank you, Faith of An Edible Mosaic! You can see her original blog post here.

I made both the cinnamon vanilla and chocolate peanut butter. I must say, the chocolate peanut butter is my favorite! New healthy treat!

I found the chia seeds below the bulk section at my local King Soopers. They’re a little pricey, $7 for eight ounces. But, that will make 15 batches of chia pudding. Not too shabby.

If you try this, you might have to make some adjustments. It took about 12 hours for my chia pudding to thicken. I used original silk almond milk, and ended up adding and extra spoonful of chia seeds. Next time I’ll reduce the amount of almond milk to 3/4 cup. I live at a high elevation, which might affect absorption rate. I also omitted the pinch of salt.

I’m going to keep experimenting with new flavors! Carmel extract, you are next.
